I think the sleep in OS X (or 'hibernation' as you folks like to call it) actually puts the RAM on extreme low power, so the computer actually isn't off, unlike Windows, where it actually saves the session and powers off. Mac OS X's equivalent (Safe Sleep) is here:

It does indeed, but it'd be cool if it went into low CPU usage mode and then slowly went hibernating the computer...or is that what safe sleep does? ;)</description>
